Domaine Pattes Loup
Based in Courgis, south of Chablis, Domaine Pattes Loup is the personal project of Thomas Pico — one of the most thoughtful and uncompromising voices in contemporary Chablis. Working organically and biodynamically on classic Kimmeridgian limestone soils, rich in fossilised marine elements.
Native yeasts, extended élevage and neutral barrels replace the stainless steel typical of the region. The result is Chablis of rare intensity: citrus and orchard fruit intertwined with saline minerality, subtle oxidative notes and a tactile mouthfeel that unfolds slowly and gains complexity with age.
