Adrien Dhondt-Grellet
Founded in 1986 by Eric Dhondt and Edith Grellet, the estate chose from the outset to bottle under its own name rather than sell to négociants. Adrien, their son, has taken the domaine to new heights by selecting individual parcels for ever more precise expressions of Chardonnay from the Côte des Blancs.
Adrien practices peasant farming — without herbicides or pesticides — drawing on organic and biodynamic principles. Since 2021, he ploughs his vines by horse. In the cellar, Burgundian barrels, indigenous yeasts and natural malolactic fermentation guide the work. The result: Champagnes of rare authenticity, faithful to their terroirs in Cramant and Cuis.
